01 - Combine rolled oats, almond milk, Greek yogurt, chia seeds, maple syrup, and vanilla extract in a medium bowl or large jar. Stir thoroughly until all ingredients are well incorporated.
02 - Fold in grated carrot, chopped nuts, raisins, cinnamon, nutmeg, ginger, and salt. Mix completely until spices and mix-ins are evenly distributed throughout the oat mixture.
03 - Cover the container and refrigerate for a minimum of 6-8 hours, allowing oats and chia seeds to absorb liquid and soften to a creamy consistency.
04 - Remove from refrigerator and stir thoroughly. If the mixture appears too thick, add a splash of milk to reach desired consistency.
05 - Portion the overnight oats between two bowls or jars. Garnish with additional Greek yogurt, shredded coconut, chopped nuts, and maple syrup drizzle if desired. Serve chilled.
