01 - In a medium saucepan, combine cranberries, water, and cinnamon stick if using. Bring to a boil over medium-high heat.
02 - Reduce heat to low and simmer for 10 minutes until cranberries burst and liquid turns deep red.
03 - Remove from heat. Add lemon slices and cloves if using; let steep for 5 minutes.
04 - Strain the tea through a fine mesh sieve into a teapot or heatproof pitcher.
05 - Stir in honey or maple syrup until fully dissolved. Adjust sweetness to taste.
06 - Serve hot, optionally garnished with additional lemon slices.
