01 - Preheat the waffle iron according to the manufacturer's instructions.
02 - In a medium mixing bowl, whisk together oat flour, protein powder, baking powder, salt, and sweetener until well blended.
03 - In a separate bowl, beat the eggs. Add almond milk, melted coconut oil or butter, and vanilla extract, then mix until smooth.
04 - Pour the wet mixture into the dry ingredients. Stir gently until just combined. Fold in any optional add-ins, being careful not to overmix.
05 - Lightly coat the hot waffle iron with nonstick spray or a small amount of oil.
06 - Spoon enough batter onto the center of the waffle iron to cover the grid. Close and cook for 3 to 5 minutes, or until waffles are golden brown and crisp.
07 - Carefully remove each cooked waffle. Repeat the process with remaining batter. Serve warm with desired toppings such as fruit, yogurt, nut butter, or honey.
