01 - Bring a pot of salted water to a boil. Add the carrots and cook for 5–7 minutes until just tender. Drain well.
02 - In a large skillet over medium heat, melt the butter. Stir in honey, brown sugar (if using), salt, and black pepper until combined and smooth.
03 - Add the drained carrots to the skillet. Toss to coat evenly and cook for another 5–7 minutes, stirring frequently, until carrots are glossy and caramelized.
04 - Transfer to a serving dish. Sprinkle with fresh parsley if desired. Serve warm alongside roast meats or as part of a vegetarian spread.
