02 - 1 cup boiling water
03 - 1/2 cup cold water

→ White Layer

04 - 1 (3 oz) box instant vanilla pudding mix
05 - 1 1/4 cups cold milk
06 - 1 cup whipped topping, plus more for garnish if desired

→ Blue Layer

07 - 1 (3 oz) box berry blue-flavored gelatin
08 - 1 cup boiling water
09 - 1/2 cup cold water

→ Garnish (optional)

10 - Fresh blueberries and strawberries
11 - Additional whipped topping
12 - Sprinkles

# How to Make It:

01 - In a medium bowl, combine strawberry or cherry gelatin with 1 cup boiling water. Stir thoroughly until dissolved. Add 1/2 cup cold water and mix well. Evenly divide mixture into 8 small clear serving cups and refrigerate for at least 1 hour or until fully set.
02 - In a separate bowl, whisk together vanilla pudding mix and cold milk for approximately 2 minutes, until thickened and smooth. Gently fold in 1 cup whipped topping. Once the red layer is set, spoon the white pudding mixture evenly onto each cup over the red layer. Refrigerate for 30 minutes.
03 - Dissolve the blue gelatin in 1 cup boiling water, stirring until fully dissolved. Incorporate 1/2 cup cold water and stir to combine. Once the white layer is firm, gently pour or spoon the blue gelatin over the pudding layer in each cup.
04 - Refrigerate assembled cups for an additional 2 to 3 hours to allow all layers to set thoroughly before final garnish.
05 - Just before serving, top each cup with additional whipped topping, fresh berries, and sprinkles as desired.

# Expert Suggestions:

01 -
  • Your guests will think you spent hours, but all that layering is much easier than it looks.
  • It somehow turns into the unofficial centerpiece of every party, especially when the sprinkles come out.
02 -
  • If you pour layers too soon, the colors will swirl together and lose their striking look.
  • Skipping the set time between steps always led to a chaotic rainbow—fun, but not the point.
03 -
  • Room temperature ingredients blend best, so set out your pudding mix and whipped topping in advance.
  • To unmold perfectly, run a warm thin knife around the edge—though I rarely wait that long to dig in.
